摘　　要：陈皮中含有陈皮甙属二氢黄酮类,它最显著的作用是具有抗氧化性,因此可将其提纯后加入到食品中,制成具有抗自由基的功能性食品。Chenpi dai is one of effective ingredients of orange peel. The text has studied the nature of anti-free-cooperation and the best method to extract the chenpi dai from orange peel.It has also studied the chenpi dai which used as the antioxidant in the food.
