摘　　要：对烟叶发酵机理、发酵过程中化学成分变化规律、基于烟叶发酵机理基础上的发酵技术进行了综述.认为今后发展的重点应加强烟叶发酵机理的研究,以便研究出适合卷烟工业化生产的发酵技术.This article makes a review of the mechanism of tobacco fermentation, the change of chemical elements during tobacco fermentation and the application research based on the mechanism of tobacco fermentation. The authors suggest that future researches should focus on the enhancement of the mechanism of tobacco fermentation so as to develop fermentation technology fitting for industrialized cigarette production,
