摘　　要：依据近４０年的主要文献，提出普鲁兰的分子结构模型，讨论其基本特点、酶水解方式及其产物；分析普鲁兰的合成机理、产率及其与诸多培养因子之间的关系；描述出芽茁霉作为一种工业上有开发前景的真菌的基本形态，生理特点；概括普鲁兰应用开发的主要领域．Based on the main informations and reported results in the past forty years,a model of molecular structure of pullulan is put forward,and its natures characteristics,its enzyme hydrolysis and hydrolyzate are discussed.The synthetic mechanism,production rate and some cultivation factors related to the production rate of pullulan is also analyzed.It is demonstrated that Aareobasidium pullulans a valuble fungus in industrial utilization,is hyhpae yeast cell dimorphic.The main application areas are generalized and problems for further investigation is forecased in the paper.
