摘　　要：较详细地综述了猪皮胶原微观结构的研究进展,并对猪皮胶原的提取方法、水解程度检测方法、纯化方法、性能表征进行了介绍,展望了猪皮胶原在食品、化妆品、生物医学等领域的广阔应用前景。最后指出了在猪皮胶原研究方面的不足以及以后的发展方向。In this paper, the microstructure of pigskin collagen was reviewed in detail. Different methods of extraction and purification, the testing of hydrolysis degrees and the collagen characteristics were summarized. Furthermore, its application to foods, cosmetics and biomedicine etc. were presented, and then present problems in the study and the future application of the collagen were also put forward.
