麦麸粒径对麸炒山药外观性状的影响

摘　　要：目的考察不同粒径的麦麸对麸炒山药外观性状的影响,为制定中药炮制辅料麦麸的质量标准提供试验依据。方法借助过不同细目的规格筛将不同粒径的麦麸分开,在保持平行对照的前提下,考察不同粒径的麦麸以及商品麦麸过筛与否对麸炒山药外观性状的影响。结果麦麸粒径越小,其在铁锅中冒浓烟的时间越短,越容易出现糊化、粘片和焦化,造成麸炒山药炮制品出现颜色均匀度差、焦片糊片所占份量增加,在麸炒山药饮片的表面粘附的黑色焦化麦麸增加,影响了麸炒山药的外观性状。还发现过50目筛麦麸的麸炒山药的外观性状明显好于未过筛的麦麸。结论不同粒径的麦麸对麸炒山药的外观性状有明显影响,中药饮片在麸炒时,所用的麦麸应过50目筛除去微屑以控制灰屑含量;在制定炮制辅料麦麸的质量标准时,应将其粒径和灰屑含量作为重要的质量指标。Objective To evaluate and compare the effects of particle sizes of wheat bran and screening on the appearance of Radix Dioscoreae Oppsitae stir- baked with wheat bran（RDOBB）, Supply the experimental basis for the quality standard of wheat bran. Methods Wheat bran of different particle sizes was sorted out through screening. On the same condition of processing , the appearance of Radix Dioscoreae Oppsitae stir - baked with bran of different particle sizes was observed respectively and compared the influnce of screening（50 mu） on its appearance. Results It showed that particle sizes of wheat bran and screening had significant effect on the appearance of RDOBB. The larger size was, the better the appearance was The appearance of RDOBB sorted through screen （50mu, 〉 350μm） was much better than that of not screened. Conclusion Particle sizes of wheat bran and screening had significant effect on the appearance of RDOBB. Wheat bran should be screened when used as accessorial baked materials in processing.
