摘 要:目的研究野生单刺仙人掌和食用仙人掌水提物清除·OH自由基抗氧化作用的差异。方法采用现代生物化学发光技术,在CuSO4-Phen-Vc-H2O2化学发光体系中测定野生仙人掌和食用仙人掌清除·OH自由基的抗氧化作用。采用紫外分光光度计测定野生仙人掌和食用仙人掌水提物中核酸和蛋白质的OD值。结果野生仙人掌能明显清除·OH自由基,具有抗氧化作用;食用仙人掌核酸和蛋白质的OD值分别为野生仙人掌的2.73倍和2.58倍,但不显示清除·OH自由基的抗氧化作用。结论野生仙人掌具有清除·OH自由基的抗氧化作用;食用仙人掌中核酸和蛋白质含量明显高于野生仙人掌。Objective To study the antioxidation action from hydroxyl radical scavenging action of wild opuntia and edible castus. Methods The hydroxyl radical were determined by CuSO4 - phen - Vc - H2O2 chemiluminescence systems respectively. The OD nucleic acid and protein were determined by ultraviolet photoelectric colorimetry. Results Wild opuntia showed antioxidation action from hydroxyl radical scavenging. Protein and nucleic acid contained in edible castus were 2.73 and 2,58 times compared with, but had no hydroxyl radical scavenging, Conclusion Wild opuntia has antioxidation action form hydroxyl radical scavenging. Edible castus has higher nutrition value than wild opuntia but has no hydroxyl radical scavenging effects.
