南瓜果实发育过程中主要营养成分的变化

摘　　要：以“蜜本”南瓜为材料，对其花后10-50d果实中主要营养成分含量的变化进行了研究。结果表明，南瓜多糖、β-胡萝卜素、氨基酸、蛋白质、总糖、还原糖含量均呈持续增加趋势，其中南瓜多糖含量在花后10～40d增加较快，花后40～50d增加较慢；β-胡萝卜素含量在花后10～20d增加较快，花后20～40d增加较慢，而花后40～50d迅速增加；氨基酸含量在花后10～20，20～40，40～50d分别呈现“快、慢、快”的增长规律；蛋白质含量在花后10～20d增加较快，花后20～50d增加较慢；总糖含量在花后10～20，20～30，30～40，40～50d分别呈现“慢、快、慢、快”的增长规律；还原糖含量在花后10～30d增加稍慢，花后30～50d增加稍快。抗坏血酸含量在花后10～40d呈现持续降低趋势，而花后40～50d又逐渐增加。各矿质元素含量变化规律较为复杂。总糖与β-胡萝卜素、总糖与蛋白质、蛋白质与氨基酸含量变化规律相似，且存在一定的相关性。The change of the nutrient contents of Miben pumpkin during 10-50 days after flowering was studied. The contents of pumpkin-amylase, β-carotene, amino acid, protein, total sugar and reduced sugar increased. The content of pumpkin-amylase increase quickly during 10--40 days and increase slowly during 40--50 days after flowering. The content of β-carotene increased quickly during 10--20 days and slowly during 20--40 days after flowering ,but increased more quickly during 40--50 days after flowering. The change trend of content of amino acid was ＂fast-slow-fast＂ during 10--20 days,20--40 days and 40-- 50 days. The content of protein increased quickly during 10--20 days and slowly during 20--50 days after flowering. The change trend of content of total sugar was ＂slow-fast-slow-fast＂ during 10--20 days ,20-- 30 days, 30--40 days and 40--50 days. The content of reduced sugar increased slowly during 10--30 days and quickly during 30--50 days after flowering. The content of Vitamin C decreased during 10--40 days and increased little during 40--50 days after flowering. The change trends of minerals were more complicated. The change trends of total and β-carotene,total and protein,protein and amino acid were similar and correlated.
