摘  要:以北京昌平的燕昌板栗为试验材料,研究经不同水浴处理后,板栗MA(Modify atmosphere)贮藏期间抗氧化酶活性的变化规律。结果表明:NaClO水浴处理对板栗内PPO、外PPO活性有抑制作用,除1 000 mg.L-1NaClO处理使板栗外PPO活性一直高于对照外,其余各处理的PPO活性在整个贮藏期间一直低于对照;POD活性的变化规律与PPO活性的变化规律类似,但在贮藏180 d时,NaClO处理的内POD活性高于对照,其中1 000 mg.L-1NaClO处理的内POD活性与对照存在显著差异;100 mg.L-1NaClO和500 mg.L-1NaClO处理使板栗SOD活性升高,而1 000 mg.L-1NaClO处理则使SOD活性降低;NaClO处理板栗提高了板栗的CAT活性,但CAT活性变化趋势与对照相同。The chestnut ( Castanea mollissima Blume ev, Yanchang)was treated with different concentration of sodium hypochlorite solution (water-curing treatment) and stored under Modify atmosphere (MA) condition,The results revealed that the Polyphenol oxidase (PPO) activity in the inner part and outer part was inhibited and decreased with the concentration of NaClO as water-curing treatment except that in the outer part increased at 1000 mg· L^-1 , The activity dynamics of peroxidase (POD) was similar with that of PPO activity but significantly decreased at the day 180, and the activity was high titan the control in the inner part, Superoxide Dismutase (SOD) activity was enhanced after using 100mg· L^-1 or 500 mmg· L^-1 NaClO solution but was inhibited by 1 000 mmg· L^-1 solution, The CAT activity was enhanced by NaClO whereas its change trend was similar to that of CK.
