摘  要:硫代葡萄糖甙是存在于十字花科植物中的次生代谢产物,可作为杀虫剂、抗微生物制剂和天然熏蒸消毒剂,其降解产物异硫氰酸酯除具有强烈的辛辣气味可作为调味品外,还具有抑菌、抗病毒和抗癌活性。硫甙吸引了众多食品化学、医药、生物学家的研究兴趣。介绍了硫甙的结构和化学性质,并对硫甙的测定方法进行了综述。Glucosinolates are abundant plant secondary metabolites that are found in cruciferous plants. They have much effectiveness as a pesticide, anti-microbial reagent and natural fumigated disinfector. Isothiocyanates are their degradation products, which have shown a series of biological and chemical characteristics. Besides their special flavor for condiments, they have many biological properties such as anti-bacterial, anti-carcinogenic potential. These properties have attracted the interesting of many food chemists, medicinal scientists and biologists. In the present article, we give a review on the formation, chemical properties and many determinations of glucosinolates.
