摘  要:分析了不同氮源培养料对虎奶菇菌核蛋白质营养价值的影响。试验结果表明,在4种参试氮源中,以尿素为氮源栽培的虎奶菇,其菌核蛋白质的化学评分、氨基酸评分、必需氨基酸指数、生物价、营养指数、氨基酸比值系数分均最高,分别为22.8、27.3、73.3、68.2、11.1和18.8。Protein from P. tuber-regium sclerotia cultivated using four different nitrogen sources [urea, cattle dung, (NH4)2SO4 and wheat bran] was assessed in terms of six nutritive quality indices——Amino Acid Score (AAS), Chemical Score (CS), Essential Amino Acid Index (EAAI), Biological Value (BV), Nutritional Index (NI) and Amino Acid Ratio Coefficient Score (AARCS). Protein from sclerotia cultivated with urea as the nitrogen source had a superior overall nutrient value and was ranked highest in terms of all six indices. Protein from sclerotia grown with wheat bran was ranked second in the case of three protein quality indices (AAS, CS and NI) and third for the remaining three indices (EAAI, BV and AARCS). Protein from sclerotia grown with (NH4)2 SO4 was ranked second in terms of three indices (EAAI,BV and AARCS) and third for the remaining three indices. Protein from sclerotia grown with cattle dung had the lowest nutrient value and was ranked lowest in terms of all six quality indices.
