摘  要:温度是影响龙眼采后果实代谢、保鲜质量和贮藏寿命的重要因素。通过人为的变温处理可以保持龙眼采后的果实品质,延长贮藏寿命。随着环境保护意识的提高和化学药物残留问题的日益严重,变温处理保鲜技术越来越受到人们的关注。为此,综述了预冷处理、热处理、低温冷藏、速冻贮藏等龙眼果实变温处理保鲜技术的研究与发展状况。The temperature is an important factor in affecting metabolism, fresh-keeping quality and storage life of longan fruits after harvesting. Man can keep fresh-keeping quality and storage life of longan fruits after harvesting through artificial alternating temperature treatment. With the improvement of environmental protection awareness and the seriousness of poison, the fresh keeping techniques of longan fruit by temperature fluctuation are getting more and more concerned. They were introduced, including pre-cooling treatment, heat treatment, cool storage and deep freezing. Research advances and developing status of those temperature fluctuation techniques were provided and analyzed.
