摘  要:由于人工合成色素多为芳香烃衍生物,有较强的慢性毒副作用和致癌性,天然植物色素作为食品添加剂越来越显示出其安全优势。栀子黄色素是从栀子果实中提取的自然界唯一存在的水溶性类胡萝卜素类天然色素,常包含藏花素、环烯醚萜苷、三萜酸等成分,在欧美、日本等国颇受欢迎。本研究目的是采用单因素试验,筛选栀子黄色素水提制备工艺最优条件。提取温度60℃、液固比8:1,提取次数2次,每次60min。总藏花素、总栀子苷和总三萜酸的提取率可分别达到1.09,106.89和72.13mg.g-1。采用的提取工艺简便易行、稳定性好。Because most artificial synthesized dyes are aroma hydrocarbon ramifications with strong, chronic poisonous side effect of cancer-causing, the natural plant dyes display the safe advantage and more used as the food additive.The Gardenia yellow pigment exwacted from the Gardenia fruit is unique natural water-soluble carrot dye, including crocin, iridoid glycoside and triterpenoid, and it is popular in the Europe, USA and Japanese. The water extraction technology of Gardenia yellow pigment was studied through a single factor experiment, the optimal condition of water extraction technology was 60℃, 8:1 (V/W) of ethanol to Gardenia, time extraction, each for 60 min. the extracting efficiency of total crocin, total geniposide and total triterpenoid reached 1.09 mg·g^1,106.89 mg·g-1 and 72.13 mg·g-1 respectively. This optimized process is simple, stable and efficient.
