摘 要:对崂山茶叶特性进行了较详细的研究,测定了其品质成分与矿质元素的含量,并讨论了矿质元素的溶出规律。结果表明:与其它品种茶叶相比,崂山茶叶中大部分品质成分和矿质元素含量处在较高水平,且第2次冲泡时溶出率仍比其他茶叶较高。大部分矿质元素在80-90℃水温下冲泡30min溶出率可达最高。实验证实了崂山茶叶品质佳、矿质营养丰富,具有滋味鲜浓、爽口、耐冲泡等优点,为崂山茶质量控制及茶饮品的开发提供了科学依据。The characteristics of Laoshan tea have been researched , the content of quality components and mineral elements in tea have been determined, and the extracted regularity of mineral elements have been discussed, too. The results show that the content of quality components and mineral elements in Laoshan tea is more than others, and most of elements can be extracted maximumly at 80 - 90℃ with the time of 30min, and the second extraction rate of mineral elements in the extraction liquid is more relatively high than others. The paper have indicted that the Laoshan tea's quality is fine and it's abundant in mineral nutrition, and it has much merity, such as delicious, tasty, drawing well and so on. So it can offer some scientifical bases for quality control and developing new drink of Laoshan tea.
