摘  要:利用常规肌肉营养测试方法测定分析16尾华鲮(Sinilabeo rendahli)的肌肉营养成分。结果表明:华鲮肌肉(鲜样)中各成分的质量分数分别是蛋白质16.69%,脂肪2.91%,水分77.90%,灰分1.82%,无氮浸出物0.68%。肌肉中含有19种氨基酸,总量为56.52%(质量分数,脱脂干样),其中8种人体必需氨基酸总量是25.81%,占氨基酸总量的45.67%;其必需氨基酸的构成比例基本符合FAO/WHO的标准。华鲮的必需氨基酸指数(EAAI)为57.37。脂肪酸中EPA与DHA质量分数分别为7.41%、28.53%,均比其他一些经济鱼类高,微量元素比值合理。Nutritional components in the muscle of 16 pond-cultured Sinilabco rendahli individuals were analyzed in common methods. The results showed that contents of crude protein, crude fat, moisture, ash and carbohydrates of fresh muscles were 16. 69%, 2. 91%, 77.90%, 1.82%, and 0. 68% respectively. The composition of amino acids in muscle was 19 amino acids, of which 8 were essential for human. In dry matter of muscle, the total content of amino acids was 56. 52% ; the content of essential amino acids was 25. 81% ; the percentage of essential amino acids in total amino acids were 45.67%. The constitutional rate of the essential amino acids accorded with the FAO/WHO standard basically. According to nutrition evaluation in amino acids score (AAS) and chemical score (CS) ; the essential amino acids index (EAAI) was 57.37. The contents of EPA and DHA in fatty acids were 7. 41% and 28. 53%, which were higher than some other economic fish. The composition of trace elements of Sinilaben rendahli was reasonable.
