摘  要:高水分的稻谷必须立即干燥以防变质。稻谷的淀粉含量较高,在干燥过程中若干燥参数选择不当,易产生爆腰、整米率低和米品质食味下降等不利现象,因此需采用适宜的低温干燥工艺进行烘干。基于上述原因,分析了稻谷干燥的必要性及目前稻谷干燥的方法和特点,论述了国内外稻谷干燥的研究进展,比较了稻谷低温真空干燥与热风干燥的不同点,指出了低温真空干燥的发展优势。High-moisture rough rice must be dried rapidly to prevent deterioration, due to starch contents were higher in paddy, and in drying process bad phenomenon was produced easily, for example fissuring, low head rice yield, quality and taste dropped and so on, if drying parameters were unsuitable. Therefore, fitting low- temperature drying processes need be adopted. This paper analyzed rough rice drying method, specialty and necessary. Studied degree about rough rice drying technology was summarized to both at home and aboard. Low-temperature vacuum drying and air drying was compared, superiority of low- temperature vacuum drying development was described.
