摘 要:对南京市市场销售的蔬菜进行抽样调查,分析蔬菜受人畜禽粪便中病源微生物污染的程度,同时,对不同施肥方式下蔬菜表面及内部大肠菌群的数量进行了跟踪调查。结果表明,用鲜粪直接浇灌蔬菜,叶菜类蔬菜表面污染严重,距离采收时间越短污染越严重;生食和仅简单烹饪的蔬菜,食用时其表面和内部仍可检测到病源菌,即使在沸水中处理也需达到一定时间才能全部杀灭,否则仍存在与病源菌接触的风险。In order to understand the present situation of vegetables polluted in NanJing,the number of total coliform bacillus group of vegetables sampled from markets and farmland were investigated. Experiments with different treatments were carried out to detect the decrease of coliform bacillus group in vegetables. The result indicates that the foliage vegetables were polluted severely by irritating fresh animal slurry directly, and vegetables were polluted severely worse if the time between irritating and sampling was short. Coliform bacillus group could be detected on the surface of raw vegetables and in the raw vegetables which Were cooked simply. Coliform bacillus group could not be detected on the surface of vegetables and in the vegetables only after they were steeped in the boiling water for a certain time, otherwise they are not safe as food.
