摘 要:抗冻蛋白(antifreeze proteins AFPs)是一类抑制冰晶生长的蛋白质,它能以非依数性形式降低溶液的冰点而对其熔点影响甚微,因而也被称作热滞蛋白。近几年来对于昆虫抗冻蛋白的研究取得了较快的发展,已有20多种昆虫抗冻蛋白被分离纯化。就昆虫抗冻蛋白的结构特征、生物学特性以及在农业、医学和食品工业等方面的应用进行介绍。Antifreeze proteins (AFPs) are proteins that have the ability to inhibit the growth of the ice. These proteins cause a non-colligative depression of the freezing point of water below that of the melting point ,so they are also named as thermal hysteresis proteins (THPs). Recently, studies on insect antifreeze proteins achieved great advances and about twenty kinds of insect AFPs were isolated. In this paper a review about the present study of insect antifreeze proteins was given in terms of the structures of proteins and their biological properties, as well as the application of AFPs in agriculture, medicine and food technology.
