摘  要:米糠油由于其本身成分的复杂性及现有加工工艺的局限性,精炼出高品质的米糠油还比较困难,因为脱胶脱色是米糠油精炼过程中极其重要的两道工序,直接影响米糠油的外观和等级评定,这两道工序一直以来都是许多专家学者投入大量精力研究的部分。本课题主要是研究毛油预处理阶段中的脱胶和脱色工序:通过三种不同脱胶方法,根据脱胶后的米糠油中磷含量的差异来选定最佳脱胶方案。在脱色工序方面,采用了复合脱色剂与活性白土混合使用,做不同脱色条件下的脱色效果比较,并选定脱色的最佳工艺参数。通过实验得知脱胶效果最好的是酶法脱胶,脱色最好的工艺条件为:复合脱色剂0.2%、活性白土4%、温度90℃、时间20m in。Refining of rice bran oil is difficult to get excellent result due to the complex process and laggard technics. Degumming and bleaching are very important processes in the refining of rice bran oil, which directly influences the oil appearance and rank, and have been a focus of research. The degumming and bleaching of gross rice bran oil during preprocess course were studied in this project. Three means of degumming were evaluated using the phosphor amount in the degummed rice bran oil as the index. In the aspect of bleaching, a compound usage of decolorant and active clay was introduced, making a comparison of the bleaching effect under different bleaching conditions. The following are the results: The best method of degumming is the enzymatic degumming. The optimum conditions for the bleaching are complex decolorant 0.2 %, active clay 4%, temperature 90℃, and time 20 min.
