摘　　要：通过对酵母细胞麦角固醇皂化提取条件的研究，并在不同的菌株上进行验证，以及与其他方法的对比，提出了对麦角固醇进行皂化提取的方法：即1mL发酵液的离心沉淀物加2mL500g／L的KOH和1．5mL无水乙醇，85～90℃皂化3h，麦角固醇提取效率较高．The conditions for extraction of ergosterol from yeast cells had been explored, such as being confirmed in the deferent strains of yeast, in comparison with other methods. As a result, the method for extraction of ergosterol, i.e. the extraction of ergosterol by saponification was established. The concrete procedures are as follows the precipitate obtained from 1 mL of fermented culture by centrifugation plus 2 mL of 500 g/L potassium hydroxide and 1.5 mL of absolute ethanol was saponified for 3 h at 85-90℃ , and then the saponification efficiency is higher.
