摘 要:对6个不同种源香椿芽菜在4个不同采摘时期营养成分的变化进行研究。结果表明:不同种源同一时期香椿芽菜的氨基酸、蛋白质、可溶性糖及维生素C含量差异显著,南京地区香椿芽菜的合理采收期应控制在4月5日左右,此时其氨基酸、蛋白质含量较高。综合分析不同种源香椿芽菜不同时期营养成分的变化认为,湖南和江苏种源综合品质较好,可作为优良菜用种源在南京地区推广栽培。The content changes of the nutritive compositions were studied comparatively at four stages of the buds of different Toona sinensis provenances, which were from Jiangshu, Sichuan, Hunan, Hubei,Henan and shaanxi. The results showed that the contents of amino acid, protein, soluble sugar and Vc were significantly different at the same period. The contents of amino acid and protein were high on April 5 or so,so it should be the optimal pick bud stage in Nanjing. By integrated analyzing the chan- ges of the nutritive compositions at different periods, Hunan and Jiangshu provenances could be ideal for planting in Nanjing, because their integrative quality was the best.
