摘  要:本文介绍了硬脂酸柠檬酸单甘酯的合成实验,对三种合成路线进行分析、比较,得出最佳合成路线。并从催化剂的种类、反应温度、单甘酯和柠檬酸的摩尔比等对酯化反应的影响对比,确定了较佳的反应条件。同时,对产品的性能进行测定,并进行了乳化能力测试。A method to synthesize monoglyceryl stearate citrate, an effective emulgent, was introduced in this paper. During analyzing and comparing three types of different methods, a suitable preparation way was selected. Meanwhile, for optimizing the reaction condition, the influences, such as catalyst types, reaction temperature, molar ratio between monoglyceric stearate and citric acid, were discussed in detail. Furthermore, emulsification properties of the esterification product were also tested.
