摘  要:目的:为掌握太原市餐饮业的食饮具消毒状况的规律和监督现状。方法:通过对太原市2004、2005年200家大、中、小饭店的消毒后食饮具的大肠菌群和致病菌检测作了调查并进行了统计分析。结果:经卡方检验得出2004、2005两年饭店比较2χ=4.76,P<0.05;大型与中型饭店2χ=71.14,P<0.01;中型与小型饭店2χ=4.34,P<0.05;大型与小型饭店2χ=103.36,P<0.01。经卡方检验得出2004、2005两年间比较,杯子2χ=10.21,P<0.01;盆2χ=4.17,P<0.05;盘子2χ=4.78,P<0.05;碗2χ=15.94,P<0.01;筷子2χ=7.99,P<0.01;碟2χ=3.55,P>0.05;盒2χ=3.55,P>0.05。结论:太原市饭店2004年合格率为70.55%,2005年74.47%,都没有达到国家有关规定。但饭店2005年消毒效果比2004年的要好。大型与中型、中型与小型、大型与小型饭店之间,食饮具的消毒效果存在显著性差异,大型饭店的消毒效果好于中型、小型饭店。2004、2005年比较,杯子、盆、盘子、碗、筷子等各类的消毒效果有显著性差异。Objective:To understand the rule and monitor current status of tableware disinfection in catering trade of Taiyuan city. Methods: The Coli - group and pathogenic bacteria of 200 hotels of different scales of Taiyuan was investigated and statistically analyzed in 2004 - 2005. Results: Comparing the disinfection state of hotel through chi - square test, X^2 = 4. 76, P 〈 0. 05 X^2 2004 and 2005 ;X^2 = 71.14, P 〈 0. 01 between the large and medium sized hotels ;X^2 = 4. 34, P 〈 0. 05 between the medium and small sized hotels.X^2 = 103.36, P 〈 0. 01 between the large and small sized hotels. Comparing the different tableware disinfection state between 2004 and 2005, we found the following results:cup: X^2 = 10. 21, P 〈0. 01 ; basin: X^2 =4. 17, P 〈0. 05; plate: X^2 = 4. 78, P 〈 0. 05; bowl : X^2 = 15. 94, P 〈 0. 01 ; chopstickt: X^2 = 7. 99, P 〈 0. 01 ; dish: X^2 = 3. 55, P 〉 0. 05; box: X^2 = 3.55, P〉 0. 05. Condusion: The qualification rate (the eligible rate) of hotels of Taiyuan city in 2004 and 2005 is 70. 55% and 74. 47%, respectively. There are apparent statistical difference on tableware disinfection state between large and medium sized ho- tels, between medium and small sized hotels, between large and small sized hotels. In general, the disinfect state of large sized hotel is better than medium and small sized hotels. And there are apparent statistical different in the different tableware disinfection state.
