摘  要:通过盐选方法对2个不同粒型的银杏品种及其混合(1∶1,粒数比)种核进行了分级,并分析了各级种仁中的营养成分。结果表明:(1)盐选分级可将绝大多数优质种实筛选出来,其适宜的筛选密度区间为1.25-1.35 g/cm3,该区段的种核含水量较低,密度较大,电导率较低;种仁中可溶性蛋白、可溶性糖、淀粉、脂肪和总黄酮含量均较高,而游离氨基酸较低。(2)盐选分级,可以区分种实成熟的早晚、饱满度的高低和储藏性能的优劣。其中处于1.25-1.35 g/cm3区段的种实成熟得较早,而1.20-1.25 g/cm3区段种实成熟得较晚;1.00-1.20 g/cm3区段种实饱满度差,其余区段的饱满度较优;1.25-1.40 g/cm3区段种实的储藏性能较好,其余区段的较差。应用盐选分级,以质论价代替以种核大小论价具有一定的科学性和可行性。Organic nutrients of different seed-type seeds of two ginkgo cultivars and their mixture ( 1: 1, number ratio)were analyzed after salt-screening and grading. The results were as follows : ( 1 ) Most of high quality seeds appeared by saltscreening and grading in salt-screening density range of 1.25 ~ 1.35 g/cm^3. The water content and conductance of ginkgo seeds tested in this density range was relatively low and their density was relatively big, their soluble proteins, soluble sugar, starch, fat and total flavonoid contents were relatively high, but soluble amino acids content was relatively low. (2) Mature degree,satiation degree and storage capability were all distinguished. The seeds in 1.25 - 1.35 g/cm^3 density range matured relatively early while that in 1.20 - 1.25 g/cm^3 density range matured relatively late; satiation degree of the seeds in 1.00 ~1.20 g/cm^3 density range was relatively low while that in the rest density range were relatively high. Storage capability of the seeds in 1.25~ 1.40 g/cm^3 density range was good but that in the rest range were bad. Price fixation by quality instead by seed size is considerably scientific and feasible.
