摘　　要：以枯草芽孢杆菌BS059-22为供试菌株,考察了影响发酵的接种量、发酵温度、初始pH值、摇床转速及发酵时间等因素,结果表明,接种量8%,发酵温度33℃,初始pH6.5,摇床转速220r/min,发酵时间18h为生产-α乙酰乳酸脱羧酶最适发酵条件。Bacillus subtilis BS059-22 was used to study the effects of inoculum, fermentation temperature, initial pH, rotate speed and fermentation time on α-acetolactate decarboxylase production. The optimum conditions were obtained as follows： inoculum 8%, fermentation temperature 33℃, initial pH 6.5, rotate speed 220 r/min and fermentation time 18 h.
