摘  要:实验考察了影响β-甘露聚糖酶降解预胶化淀粉因素:缓冲液pH值、反应时间、底物用量、反应温度及酶用量。确定了降解的最佳条件条件:缓冲液pH7,反应时间2h,预胶化淀粉浓度5mg/mL,温度90℃,酶加入量5mL。设计一个L16(45)正交实验,确定加热温度为反应过程中的显著因素。In this experiment, the factors, including pH, reaction time, concentration of substance, reaction temperature and enzymes amounts, which can influence β - mannanase degradating pregelatinized starch, were studied. The optimum conditions for best degradation were as follows : ptI of reaction system buffer solution was 7, reaction time 2 hours, concentration of substance 5 mg/mL, reaction tempratue 90℃, enzymes amounts 5 mL. An orthorgonal test of L16 (45 ) was designed, which showed heating temprature was prominent factor.
