摘  要:光学活性丝氨酸具有特殊的生理功能,在食品、医药领域具有广阔的应用前景,目前尚未国产化,其研究开发日益受到人们的重视。化学合成的N-氯乙酰基-DL-丝氨酸经固定化酶拆分成L-丝氨酸和D-丝氨酸。探讨了DL-丝氨酸的乙酰化方案并进行了乙酰化实验,确定了以氯乙酰氯为酰化剂酰化实验工艺参数,包括pH、反应物配比、反应温度等。Optical serine has special pHysiological properties to humans and animals's body. It has a good prospect in the fields of food and additives, especially in medicine, however it has not been produced in industrial scale. As it has the important properties, considerable efforts have been devoted to develop economic methods for the production of optical serine within recent years. Optical serine can be prepared by optical resolution from racemic serine which prepared through chemical synthesis. There are several methods for optical resolution, including pHysical method,biological method and chemical method. The approach of using immobilized enzyme technology for the production of optical amino acids was one of the most successful industrial application. The chemical synthesized N-acytl-DL-serine were optically resolved with immobilized enzyme to give L-amino acids and unhydrolysed N-acyl-D-amino acid. This paper discussed the acylation method and reaction condition of DL-serine. We have found that chloroacetylchloride was the most suitable acylating agent. The efforts such as pH of the reaction system,substrate proportion and reaction temperature on the acylation of DL-serine were also studied.
