摘 要:目的以干辣椒为原料,研究采用壳聚糖树脂吸附提取辣椒碱及其纯化的工艺。方法:用NaOH溶液进行粗提取,提取液处理后用壳聚糖树脂柱吸附,用乙醇洗脱得到辣椒素溶液,重结晶得到淡黄色针状辣椒素晶体。采用香兰素-亚硝酸钠比色法测定辣椒素含量。结果:从干辣椒中提取得到的辣椒素收率为0.38%,辣椒素晶体纯度为91.20%。结论:采用该方法提取辣椒碱,方法操作简便,成本低廉,产率和纯度较高,结果较理想。Objective To extract and determinate capsaicinoid from capsicum with chitosan resin. Method Capsaicinoid was separated by means of 1% NaOH extracting initially. After degreasing, the capsaicinoid in extraction was absorped by chitosan resin and then eluted by ethanol. A straw yellow crystal of capsaicinoid was isolated from recrystallization. The crystal capsaicinoid was deteminated by vanitlin- sodium nitrite colorimetry. Results Capsaicinoid was extracted and purified. The yield was 0.38% and the purity of crystal was 91.20%. Conclusion The method was not only simple in process, but also high in yield and purity at low cost. It could be used for industrial production,
