摘 要:以‘八月脆’桃果实为材料,研究了常温条件下,不同浓度外源乙烯(10~20μL.L-1和50~80μL.L-1)处理对气调贮藏(9%~11%CO2+9%~11%O2)期间以及在20℃回温3 d后桃果实MDA(丙二醛)含量、PPO(多酚氧化酶)和LOX(脂氧合酶)活性的影响。结果表明:常温贮藏条件下,桃果实MDA含量随着果实的成熟而升高,PPO和LOX活性在第4 d出现高峰。外源乙烯提高了气调贮藏果实MDA含量,贮藏60 d时,高浓度外源乙烯处理果实MDA含量明显升高。回温后,冷藏对照果实MDA含量随着贮藏时间的延长而增加,且在贮藏60 d时,MDA含量高于常温贮藏果实的MDA含量。外源乙烯对LOX的作用与其对MDA的作用一致。高浓度的外源乙烯可抑制贮藏前期桃果实PPO活性,低浓度外源乙烯则降低了贮藏后期桃果实PPO活性,但回温后,低浓度外源乙烯处理果实PPO活性明显升高。综合考虑不同处理对CA贮藏桃果实MDA含量、PPO、LOX活性的作用特点,认为50~80μL.L-1外源乙烯处理对减轻桃果实的低温冷害、抑制果实褐变有一定的作用。Influence of ambient temperature, exogenous ethylene of different concentrations (10-20 μL · L^-1, 50-80μL · L^-1)on MDA content, PPO and LOX activities of 'Bayuecui' peach fruit (Prunus persica) during CA storage (9%-11%CO2+9 %-11%O2) and then 3 days shelf-life at 20℃ was studied. The resuits showed that the content of peach fruit increased with the days of storage at ambient temperature, the peaks of PPO and LOX activities were at 4 days of stoeage. The MDA content of peach fruit during CA storage increased when treated with exogenous ethylene. A higher MDA content appeared at the 60 days of storage when treated with 50-80μl · L^-1 exogenous ethylene. The MDA content of peach fruit in cold storage increased gradually with the time of storage, and its MDA content at the 60 days of storage was higher than that at the ambient temperature. The effects of exogenous ethylene on LOX and MDA were similar. The treatment of exogenous ethylene with 50-80 uLμL · L^-1 concentration could suppress the PPO activity in the early storage period ,while exogenous ethylene with 10-20μL · L^-1 concentration could reduce the PPO activity in the late period, however, the PPO activity with 10-20μL · L^-1 concentration appeared rise obviously after peach fruit was ripen at 20℃ for 3 days. Considering the comprehensive effects of different ethylene concentrations on MDA content, PPO and LOX activities of peach fruit during CA storage and shelf-life, treatment with 50-80μL · L^-1 exogenous ethylene was more effective in alleviating the cooling injury and controling the browning of peach fruit in low temperature storage.
