导数-比导数紫外分光光度法同时测定肉制品中硝酸根和亚硝酸根

摘　　要：目的研究同时测定肉制品中硝酸根和亚硝酸根含量的方法。方法在不需要分离和掩蔽的条件下,建立了导数-比导数紫外分光光度法同时测定肉制品中硝酸根和亚硝酸根含量。结果测定的回收率及精密度均较高,二者的浓度范围分别在0～10mg/L和0～9mg/L之内符合线性关系,回归相关系数r均达到0.999以上。结论该方法操作简单,结果可靠、准确。Objective：To explore an effective method for simultaneous determination of nitrite and nitrate in meat products.Methods： Derivative-ratio derivative spectrum method was established without separations and camouflages.Results：The results indicate that their concentrations ranging 0～10mg/L and 0～9mg/L were indirect proportion to their values of derivative-ratio derivative spectra without any separations and camouflages.The correlative coefficient ＂r＂ was above 0.999.The results of rate of recovery and the RSD tests were satisfactory.Conclusion：This method is easily and accurately used with reliable results.
