摘 要:分别对部分动物组织如新鲜猪瘦肉、猪肝及牛肉在不同含水量、不同温度的比热进行了DSC测试。结果表明在0℃-40℃范围内,生物组织的比热值随温度变化不大,随着温度的升高略为降低,与普通的工质比如水等的比热存在着一定的差异;含水量对生物组织的比热有一定的影响,比热随着含水量的增加而增大。回归了各种组织不同含水量下比热与温度的线形关系式以及比热与含水量的线形关系式。Differential scanning calorimetry (DSC) technique is used for specific heat test when some tissues in vitro such as pork, pig' s liver and beef are in different hydration and at different temperature from 0 ℃ to 40 ℃. The result, show that specific heat of some tissues in vitro almost keep steady or induced appreciably while their temperature increased, which were different from usual materials such as water, it also shows that the main rinfluencing factor of specific heat was hydration, the more of hydration, the larger of specific heat. The authors also regressed linear relation formula between specific heat and temperature at different hydration, between specific heat and hydration.
