摘 要:研究了衍生化气相色谱法分离测定葡萄酒中多元有机酸;在N,N-二甲基甲酰胺非质子溶剂中,选用碘乙烷与多元有机酸的四甲基铵盐反应制备各酸相应的乙酯,乙酯在SE-30色谱柱上程序升温得到满意的分离,同时采用内标法鉴定分析了葡萄酒中的多种多元有机酸,并比较测定了品牌和自制葡萄酒中多元有机酸的含量.Derivatization gas chromatography is used for the determination of polybasic organic acids in wine as follows: polybasic organic acids are neutralized by tetramethyl ammonium hydroxide and formed tetramethyl ammonium salts of the corresponding acids, which in the next step could be esterified with iodoethane as esterification reagent and N,N'-dimethyl formamide as solvent. The ethyl esters acquire excellent resolution with temperature programming and are determined with internal standard method by GC-9790 chromatograph equipped with SE-30 column. Meanwhile contents of polybasic organic acid in red wine and personal -preparation wine are determined and compared
