摘 要:利用微生物细胞介电模型,讨论细胞膜介质的极化时间常数.根据法拉第定律、高斯定律和电荷守恒定律,建立脉冲电场作用下微生物细胞跨膜电压的Laplace方程,分析脉冲电场作用下细胞跨膜电压的变化规律.证明脉冲电场的非热效应强于静电场、指数衰减波脉冲电场和震荡衰减波脉冲电场,为脉冲电场食品处理技术等脉冲电场非热技术提供理论依据.A dielectric model for microorganism cell, which was established from its structure, composition and function, was proposed. The membrane polarization time was determined from cell's simplified equivalent circuits. Laplace equations of the proposed model were presented according to Faraday's law, Gauss's Law and Charge Conservation Law. This study proves theoretically that, in comparison with other electric field, the pulse electric fields (PEF) are able to induce much stronger transmembrane potential on microorganism cells and shows that PEF is desirable to be used in non-thermal food sterilization.
