摘  要:利用氯醌酸与水显色这一原理,建立了分光光度法测定肉中含水量的方法。当乙醇溶液中含水量在0.04%~2%时,含水量与吸光度值呈正比关系,最大吸收波长为530 nm。文中采用了高压微波辅助萃取技术对样品进行预处理,操作简便、快速,测量结果与国标方法相比无显著性差异。方法的检出限为69μg/g,RSD(n =6)为0.029%。A novel method for the determination of water content in fresh pork by spectrophotometry based on the chromogenic reaction of water with Chloranilic acid was proposed. The sample's water content had a linear interrelation with the absorbance if the sample absolute ethanol's solution was in the range of 0.04%~2%. The absorption maximum wavelength was 530nm. The microwave--assisted extracting technology was applied to the sample pretreatment. Compared with the national standard method, the method proposed in this paper had several advantages such as the simplified operation and the less time consuming, while the results were as good as the national standard method. The detection limit was 69μg/g and the relative standard deviation (n=6) was 0. 029%.
