摘 要:对36月龄全放牧饲养条件下的8头西门塔尔与云南地方黄牛(西本)杂交公牛进行了胴体商业分割肉的测定研究。结果显示,西本杂交牛的屠宰率和净肉率分别为51.0%,36.6%。高档肉产率、优质肉产率及一般肉产率分别为9.37%,28.63%及15.38%。结果表明,西本杂交牛的商业分割高档肉及优质肉产率较高。Eight Simmental × local male cattle of Yunnan Province were used to determine the commercial cutting meats at the age of 36 months. All experimental cattle were reared outdoors with forage and no supplemental diet was supplied until the slaughter age of 36 months. The dressing percentage and lean percentage were 51.0% and 36.6%. The percentages of prime meat, choice meat and common meat were 9.37% , 28.63% and 15.38%, respectively. The results in this experiment showed that the yield potential of high price commercial cutting meats for Simmental × local male cattle of Yunnan Province was excellent.
