摘  要:以耐SO2品种巨峰(Vitis vinifera Linn.×V.labrusca Linn.)和不耐SO2品种红地球(V.vinifera Linn.)为试材,研究了葡萄贮藏中SO2伤害与膜脂过氧化的关系。为探讨SO2伤害与自由基产生的关系,在传统低温贮藏试验的基础上,进行了巨峰葡萄常温离体试验。结果表明,SO2伤害使葡萄脂氧合酶(LOX)活性升高,丙二醛(MDA)含量及组织相对电导率增加。受SO2伤害后,耐SO2品种巨峰的LOX活性、MDA含量和组织相对电导率的上升幅度均低于不耐SO2品种(红地球)。SO2伤害诱发自由基产生,导致葡萄MDA含量增加,自由基清除剂可降低MDA含量增加的幅度,减弱SO2对膜脂的伤害。The relationship between phytotoxicity of SO2 and membrane lipid peroxide in stored grapes were studied. Table grapes cv. Kyoho (tolerant to SO2) and Red Globe (susceptive to SO2), were stored in MAP (modified air package) for 120 d at 0 ℃. LOX activity, content of MDA and relative electrical conductivity were examined monthly or every 25 d. Treatments of toxic dose of SO2 increased LOX activity, hence the membrane lipid peroxide was accelerated, content of MDA and relative electrical conductivity were higher than control As a tolerant cultivar, after injured by SO2, Kyoho exhibited a lower increscent of LOX activity, lower content of MDA and relative electrical conductivity than the susceptive variety Red Globe. The effects of free radicals, antioxidants and toxic-dosed SO2 were also evaluated on content of MDA of grape cv. Kyoho in vitro at room temperature. Results showed that SO2 injury could induce production of active oxygen. Active oxygen cleaner could reduce kickbacks induced by SO2 injury.
