达里湖东北雅罗鱼和鲫鱼的营养分析评价

摘　　要：2006年10月对达里湖的东北雅罗鱼和达里湖鲫鱼的营养成分进行了测定,结果表明:东北雅罗鱼和达里湖鲫鱼的蛋白质含量分别为17.54%和16.96%;脂肪含量分别为1.23%和3.44%;氨基酸总量分别为79.35%和75.58%(干样),其中必需氨基酸含量分别为38.44%和34.61%(干样),占氨基酸总量的47.81%和45.15%;还含有丰富的铁、铜、锌等微量元素。Analysis of the nutritive composition of the Amur ide Leuciscus waleckii （Dybowski） and Golden （chinese） carp Carassius auratus （Linnaeus） was undertaken in 2006 October.The content of protein of the Amur ide Leuciscus waleckii （Dybowski） and Golden （chinese） carp Carassius auratus （Linnaeus） were 17.54% and 16.96% respectively （fresh flesh base）;the content of lipid were 1.23% and 3.44%;the content of total amino acids were 79.35% and 75.58%;the percentages of essential amino acids in total amino acids were 47.81% and 45.15%.Its contain aboundant microcontent nutritive elements in the fishes, such as Fe,Cu,Zn.
