摘 要:减压保鲜又称低压保鲜、真空保鲜,是在普通冷藏和气调贮藏技术的基础上进一步发展起来的以降低贮藏环境压力为特点的一种特殊的气调保鲜方法。减压冷却作为一种先进的冷却技术,目前对它的认识尚欠深入,对减压冷却技术机理分析还比较少,对冷却过程的失水控制、压力控制、温度控制以及系统优化节能分析还很有限。介绍了国内外减压贮藏保鲜和减压冷却的发展和在研课题现状,并提出后续研究工作应注意的问题和方向。Hypobaric storage, also called low pressure storage and vacuum storage, is further developed on the base of general cooling storage and air conditioning storage technologies. It is a special method of keeping freshness by air conditioning that are distinguished by reducing the environment pressure. Reducing pressure cooling is one kind of advanced cooling technology. There are few of researches of analyzing its principle and the investigation on the losing water control, pressure control and temperature control during the cooling process. The optimization of energy saving in the storage system is needed to be improved. This paper summarize the researches on hypobaric storage and reducing pressure cooling both here and abroad, give some advice for the future.
