摘 要:研究红地球葡萄贮藏过程中果粒发病率和各项生理指标的关系,确定能够预测葡萄贮藏效果的指标,以5个不同产地红地球葡萄为试验材料,测定冷藏过程中POD、PAL、PPO、多酚等主要生理指标的变化。各生理指标在贮藏过程中与果实发病率有较好的相关性,其中果肉PPO活性及多酚含量与发病率的相关系数分别大于0.812和0.828;葡萄采收时多酚含量与贮藏结束(75d)时果粒发病率的相关系数为0.885。果肉PPO活性及多酚含量能够监测贮藏过程中果粒发病率的变化,葡萄采收时果肉多酚含量能够较好地预测贮藏后期红地球葡萄病害的发生情况。To determine the relativity between physiological Indexes and the disease incidence rate and the predictive indicator for storage effect of red globe grape, red globe grape from five product regions as material, the disease incidence rate and main physiological factors were measured during cold storage. The results showed that all quality indexes could indicate the disease incidence rate during cold storage, PPO activity and the phenolic substance content correlate closely to the disease incidence, the correlation coefficient is 0.812, 0.828 respectively. The correlation coefficient between the initial phenolic substance content of flesh and the disease incidence rate after 75 d'storage is 0.885, PPO activity and the phenolic substance content can monitor the varieties of disease incidence rate during cold storage, the initial phenolic substance contentof flesh can predict the batch quality of red globe grape.
