摘　　要：本文研究了枸杞子色素的种类及其对ｐＨ、光照和温度的稳定性。结果表明，枸杞子含有至少三种色素，光照和高温均可显著降低吸光度，ｐＨ＞１．１时色素稳定，ｐＨ≤１．１时变色。In this paper the kinds of extracting pigment from Lycium barbarum is proposed and a preliminary study on the stability of pigment under different pH,light and temperature is presented.The results show that at least 3 kinds of pigment is contained in Lycium barbarum,high temperature and light can decompose pigment,and the pigment is stable when pH>1 1
