摘　　要：目的研究葛根的最佳采收期和初加工技术。方法以葛根素的含量为指标,对不同采收期和不同加工方法的葛根,进行比较。结果多年生葛根的葛根素含量最高分别为1.60%,5.11%。在葛根素含量的比较过程中,发现XNY-1的烘干处理与风干处理相差不大,XNY-2的烘干处理比风干处理高出0.124%;XNY-1带皮处理比去皮处理高出0.236%,XNY-2带皮处理则比去皮处理高出0.708%。结论采收期应选在1月或更晚的月份进行,加工方法以带皮烘干为好。Objective To study the best harvesting period and initial processing method of Gegen. Methods Comparison of different harvesting period and processing method in Gegen as an index of puerarin. Results In perenuial Gegen, the contents of puerarin were the highest to 1.60% and 5.11%, respectively ; compared with the air drying, drying treatment had a little effect on the content of puerarin ; the contents of puerarin in overbark treatment was over 0. 124% than that of peeling process. Conclusion The best time should be selected harvesting in January or to more late stage , the processing method was better for overbark drying.
