摘 要:【目的】明确可见光和近红外光谱快速无污染检测猪肉颜色的可行性。【方法】采用漫反射光纤探头测定真空包装猪肉的光谱,用国际发光照明协会(CIE)规定的亮度(L*)、红度(a*)、黄度(b*)、色相和饱和度对猪肉颜色进行评价。【结果】测得任意厚度真空包装猪肉的可见光谱和近红外光谱,经二阶微分处理,用偏最小二乘法进行回归分析后,所有肉色的相关系数均大于0.83,且预测值与测定值之间无显著差异。【结论】用漫反射光纤探头的可见光和近红外光谱可以预测猪肉肉色,且精度较高。利用可见光和近红外光谱可以实现猪肉颜色的快速无污染检测。[Objective] The study investigated the feasibility of fast and nonpolluting meat color detection by using visible and near infrared spectroscopy . [Method] The fiber optic in interactance mode was used to measure the spectra of vacuum-packed pork loins in random thickness. The meat color was evaluated by CIE lightness (L*) ,redness (a*) ,yellowness (b*) ,chroma and hue. The raw spectra was pretreated by second derivative and the partial least square regression (PLSR) was used to build calibration model. [Result] All the correlation coefficients (R) of color indexes were larger than 0.83. It meant that evaluates meat color using visible and near infrared spectroscopy in interactance mode had higher precision than those spectra of other methods. [Conclusion] The visible and near infrared spectroscopy with fiber optics in interactance mode had the fast and nonpolluting measurement feasibility to detect the meat color.
