摘　　要：利用植物有效成分阻断亚硝胺合成是防治癌症的有效途径之一。黄酮类化合物在抑制亚硝化反应中有着广泛的应用。重点探讨黄酮类化合物抑制亚硝化反应的机制,典型植物中黄酮含量变化规律及阻断亚硝胺合成或清除亚硝酸盐的效果,以期为寻求最佳的抗癌药物提供帮助。It is an effective methods reducing the content of nitrite by active constituent in plant. Flavone compounds has a broad application in inhibiting nitrosamine reaction. This paper play emphasis on the mechanism of flavone compounds inhibiting nitrosamine, the change of content in flavones and the results of scavenging nitrite nitrogen, offering some help to seek effective pharmaceutical.
