摘  要:通过测定剑白香猪Ⅰ和Ⅱ系的生产性能,结果表明,各项指标差异不显著(P>0.05),仅初生重差异显著(P<0.05)。剑白香猪体躯矮小,生长缓慢;性成熟早,母猪母性好,护仔行为明显;内脏器官与成人器官相接近;胴体品质良好,肉色呈鲜红色,大理石纹适中,pH值正常,未出现PSE肉和DFD肉,失水率分别为21.88%、19.63%;滴水损失分别为1.89%、2.26%;熟肉率分别为62.07%、61.51%。剑白香猪肉质好,是加工高档猪肉产品的原材料。the performance was studied between Jianbai Xiang pig Ⅰ line and Ⅱ line, the results were as follows: every index had little difference ( P 〉 0.05 ) except that litter birth weight had significant difference (p 〈 0.05 ). Jianbai Xiang pig body was dwarfish, and grew slowly; sex maturity was at early days, sow maternity was well, and protect piglets act was evident; viscera organs were close to adult organs ; carcass quality was excellent, meat colour presented vermeil, the marbling distributed properly, the pH value was normal, PSE meat or DFD meat was undetectable, rate of dehydration was 21.88% , 19.63% respectively, drip loss was 1.89% , 2.26% respectively; cooked meat percentage was 62.07% , 61.51% respectively, and Jianbai Xiang pig meat quality was excellent becoming raw materials for processing the top grade meat products.
