摘  要:【目的】研究储存玉米品质变化的生理生化机制,寻找评判玉米储存品质的指标。【方法】对同一区域不同储存年限玉米样品的过氧化氢酶(CAT)活性、过氧化物酶(POD)活性、电导率、丙二醛(MDA)等4个细胞膜脂过氧化指标和生活力、发芽率、呼吸强度第3个生理指标进行研究。【结果】随储存时间的延长,MDA含量增加,细胞质膜透性增大,保护酶类活性均逐渐降低;生活力、发芽率、呼吸强度呈极显著相关性(P<0.01),4个膜质损伤指标与3个生理指标呈显著和极显著的相关性。【结论】自由基损伤导致的玉米籽粒内部抗氧化酶活性的降低、细胞膜质过氧化程度的加深及细胞膜透性的增加是储存玉米品质变化的重要因素。[Objective] The aim of this experiment is to study the physiological biochemical mechanism of aging of storage maize, to investigate the evaluating indexes of storage quality of maize. [ Method ] Four cell membrane lipid peroxidation parameters-activities of catalase (CAT) and peroxidase (POD), electrical conductivity, malondiadehyde (MDA) and the 3 physiological parameters-viability, germination rate, respiratory intensity of the maize stored for different years at the same zone were studied. [Result] The content of MDA and penetration of cell membrane increased, and the activities of CAT and POD gradually decreased with time increment. Viability, germination rate, respiration intensity had extremely significant correlation with each other, and the 4 cell membrane lipid peroxidatic parameters had significant and extremely significant correlation with the 3 physiological parameters. [Conclusion] Reduction of antioxidative enzyme activity, peroxidatic accumulation of cell membrane lipid, and penetration of cell membrane were mainly induced by free radicals damage, which were the important reasons for the aging of storage maize.
