摘 要:通过比较试验研究大豆胚芽油脱胶和脱酸的方法。结果表明,高温水化脱胶法对大豆胚芽油胶质沉降快,脱胶效率高,胶质易与大豆胚芽油分离,且大豆胚芽油清亮、得率高。低温浓碱脱酸法的大豆胚芽油得率高,VE损失少,酸价低。以脱色油得率和脱色效率为指标,研究大豆胚芽油脱色方法,试验表明:采用白土+活性炭(10∶1)为脱色剂,脱色剂添加量为2%,在90℃温度下对大豆胚芽油脱色20min,大豆胚芽油得率高、脱色效果好。The degumming and deacidificate method of soybean embryo oil are studied, the result showed that high temperature degumming method has fast gelatine sedimentation velocity, high degumming efficiency, gelatine is easy to separate with soybean embryo oil and high obtaintion of soybean embryo oil. Low temperature and high lye to deacidificate method has high obtaintion of soybean embryo oil, low loss of vitamin E and low acid value. The obtaintion of decolor oil and decolor oil efficiency were considered as standerd, decolorate method was studied in this paper, the result showed the optimum conditions as followed: the decoloration carrier is bleaching and activity carbon, its ratio is 10:1 and the add quantity is 2%, the decoloration is 90 ℃, the operation time is 20 min.
