摘 要:将杨梅果汁分别采用褐藻胶和壳聚糖进行澄清处理,确定各自的最佳工艺条件,并对两种澄清效果进行比较。分别用壳聚糖和褐藻胶对杨梅果汁进行澄清,根据透光率,确定最佳用量。结果表明,褐藻胶用量是0.04g/L,时间为25min;壳聚糖用量是0.15g/L,时间为13min。两种方法对澄清杨梅果汁均有较好的稳定性,但总体上看,壳聚糖因来源丰富,成本低,澄清条件易控制,所得澄清汁透光率达到96%以上,澄清效率高,所以壳聚糖法明显优于褐藻胶法。Alginate and ehitosan were used with waxberry juice clarification. The optimum condition was decided respectively, and their clarification effects were compared. Alginate and ehitosan were used with waxberry juice clarification. The optimum dosage was decided respectively according to transmittance. The results showed that dosage of alginate was 0.04 g/L, time at 25 min; the dosage of chitosan was 0.15 g/L, time at 13 min.Conclusion: each method had fine stability, but on the whole, chitosan was better than alginate because its resource was abundant with low cost and the clarifying condition could control easily. The clarification effect of chitosan was good and the transmittance of clarifying waxberry juice was over 96 %
