摘　　要：L-谷氨酰胺对生命的重要性正日渐突出,被认为是目前所知道的最重要的氨基酸之一,介绍了L-谷氨酰胺的生化性质及其在食品、药品等方面的用途,并对其生产方法进行归类概述。L - Gin on the importance of life is increasingly prominent, and is considered at present as one of the most important amino acid. The biochemical nature, the application for food and medicine and its production are discussed.
