摘  要:以安徽省怀远县的石榴产品玉石籽的石榴皮和石榴籽为原料,研究其组分的差异性。结果表明,石榴籽中粗蛋白含量是石榴皮中的5倍,粗纤维含量是石榴皮的近10倍。石榴皮中可溶性糖含量高达37.8%,高出石榴籽近57%,游离氨基酸含量比石榴籽高35.83mg/100g,黄酮和生物碱等功能成分含量也均高于石榴籽。石榴籽主要含有常规成分,而石榴皮主要含有一些功能性成分。Yushizi Pomegranate, grown in Huaiyuan County, Anhui Province, was selected to study the ingredient difference between granatum and pomegranate seed. The results showed that contents of crude protein and crude fiber in pomegranate seed were about five times and ten times than those in granatum, respectively. Compared with pomegranate seed, the contents of soluble sugar were about 37.8%, higher 57% and free amino acid was higher 35.83 mg/100 g in granatum. Other functional ingredients in granatum such as flavone, quercetin and alkaloid were higher too. It is suggest that the distribution of proximate ingredients and functional ingredients between granatum and pomegranate seed have a certain difference. The former is in pomegranate seed but the later is in granatum mainly.
