摘　　要：介绍了壳聚糖及其衍生物的贮藏保鲜特性,综述了壳聚糖及其衍生物在果蔬保鲜中的应用、存在的问题及发展方向。Characteristics, application and progress of chitosanon and its derivatives on fruits and vegetables preservation were discussed in this paper. Some problems in our research were also introduced.
