摘 要:目的:建立肉制品中的正磷酸盐、焦磷酸盐和三聚磷酸盐的分析方法。方法:用免试剂离子色谱(RFIC)带电导检测器进行分离测定,色谱柱:IonPac AS11-HC Analytical(4×250 mm),保护柱:IonPac AG11-HC Guard(4×50 mm),流动相为KOH水溶液,进行梯度洗脱。样品经水超声提取后,用免试剂离子色谱电导检测进行分析检测,结合保留时间和电导检测值进行定性分析。结果:该法正磷酸盐的回收率为98.8%~102.1%,精密度RSD为1.24%,以原样计方法检出限为4μg/g,焦磷酸盐的回收率为89.8%~91.5%,精密度RSD为0.65%,以原样计方法检出限为4μg/g,三聚磷酸盐的回收率为92.6%~94.4%,精密度RSD为0.82%,以原样计方法检出限为10μg/g。结论:该方法具有前处理方便、分析速度快、结果准确等优点。能够满足检测不同的肉制品中多聚磷酸盐含量的要求。Objective:To establish a method for determination of polyphosphates in meat.Methods:Polyphosphates were determined by free reagent ion chromatography equipped suppressed conductivity.Chromatographic column: IonPac AS11-HC(4×250 mm),Mobile phase:KOH water solution,gradient elution.Polyphosphates are extracted from meat in the ultrasonic with precipitator added in deionized water.The qualification analysis is done by using retention time and conductivity.Results:The average recovery for phosphate was 98.8%~102.1%,relative standard deviations 1.24%,the limits of detection for phosphate 4 μg/g.The average recovery for pyrophosphate was 89.8%~91.5%,relative standard deviation 0.65%,the limits of detection for pyrophosphate 4 μg/g.The average recovery for trimetaphosphate was 92.6%~94.4%,relative standard deviations 0.82% and the limit of detection for trimetaphosphate 10 μg/g.Conclusion:The method is simple and fast and has a good separating effect.So it could meet the need for determination of polyphosphates in meat.
